  • 3 tbsp granulated white sugar
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 6 oz cream cheese, cold
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Prepare the apple cider reduction by boiling and simmering until thickened; set aside to cool.
  2. In a mixing bowl, beat cold cream cheese with granulated sugar and vanilla until smooth; refrigerate.
  3. In another bowl, whisk together flour and spices. Cream butter and brown sugar in a separate bowl until fluffy. Mix in egg yolks and vanilla, then gradually add dry ingredients.
  4. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets; flatten slightly. Place cheesecake filling in the center and cover with dough.
  5. Bake for about 11 minutes or until lightly golden. Cool on a rack.
  6. Brush warm cookies with melted butter and sprinkle with spiced sugar.
