  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • 3 cups fresh apple cider
  • 3 bricks cream cheese (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices

Instructions

  1. Boil the fresh apple cider with mulling spices in a large pot for about an hour until it reduces to 1/3 cup. Let cool.
  2. Preheat your oven to 350°F.
  3. In a food processor, pulse cookies into crumbs, then mix with melted butter and powdered sugar until combined.
  4. Press the crust mixture into an 8-inch springform pan and bake for 10 minutes; let cool.
  5. Lower the oven temperature to 325°F.
  6. In a stand mixer, beat cream cheese and brown sugar until smooth. Add sour cream, vanilla, salt, cinnamon, and cooled reduced cider; mix well.
  7. Gradually add eggs one at a time followed by flour; mix gently.
  8. Pour filling into the crust and bake in a water bath for about 90 minutes until set around edges but wobbly in the center.
  9. Turn off the oven and leave cheesecake inside with the door ajar for 30 minutes; cool further before refrigerating for at least eight hours before serving.
