  • 89 apricots (seeded and cut into small pieces)
  • 2 cups raspberries
  • 2 cups sugar
  • 2 tbsp. fresh lemon juice

Instructions

  1. In a large saucepan, combine apricots, raspberries, and sugar. Stir well, mashing some raspberries with the back of a wooden spoon. Let sit for 1 hour to help dissolve the sugar.
  2. Add fresh lemon juice to the fruit mixture. Bring to a boil over medium-high heat. Once boiling, reduce heat to medium and simmer for 20 minutes, stirring occasionally.
  3. Divide the hot jam between three pint-sized jars and seal tightly with lids. Allow to cool at room temperature before refrigerating.
