Arroz Mexicano, or Mexican Rice, is a deliciously vibrant side dish that elevates any Mexican meal with its rich flavor and fluffy texture. Infused with homemade tomato sauce and spices, this comforting dish can be whipped up in under 30 minutes, making it an excellent choice for busy weeknights or festive gatherings.

  • 2 tomatoes (quartered)
  • 1/4 onion (quartered)
  • 1 garlic clove
  • 1 cup water
  • 1 tbsp chicken bouillon
  • 1/8 cup olive oil
  • 2 cups long grain white rice
  • 1/4 onion (finely diced)
  • 1 garlic clove (finely minced)
  • 1 tbsp chicken bouillon
  • pinch whole cumin
  • 1 1/2 cups water

Instructions

  1. To make the tomato sauce, cook the tomatoes, onion, and garlic in water until soft. Blend until smooth.
  2. In a large pot, heat olive oil over medium heat. Add the rice and toast until golden.
  3. Stir in finely diced onion and minced garlic; continue to toast.
  4. Add chicken bouillon, cumin, remaining water, and the blended tomato sauce to the pot.
  5. Cover and cook on medium heat for 12 minutes. Let rest covered for an additional 5 minutes before serving.
