  • 3 pounds chuck roast
  • 2 pounds short ribs (bone-in)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • Fresh cilantro
  • Fresh lime juice
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 1 carrot (cut in half crosswise, then cut in half (4 large pieces of carrot))
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 2 bay leaves
  • 2 teaspoons chicken bouillon
  • 12 teaspoons chili powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin
  • White onion (diced)

Instructions

  1. Cut the chuck roast into 2-inch chunks. Season with salt and pepper, then sear in a large pot with avocado oil until browned.
  2. Add seared meat along with quartered onion, garlic bulb, carrots, bay leaves, and dried chiles. Pour in beef broth followed by water to cover.
  3. Stir in chicken bouillon, oregano, cumin, and salt; bring to a boil.
  4. Skim impurities after boiling for 30 minutes. Blend softened peppers with vegetables until smooth.
  5. Strain if desired; return blended mixture to the pot.
  6. Simmer covered for about 3 hours until meat is tender enough to shred easily.
  7. Remove meat from broth; serve as a stew topped with fresh cilantro, diced onions, and lime juice.
