  • 6 scallions (thinly sliced)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin seasoning
  • 4 ounces cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. 1. Preheat your oven to 350°F.
  2. 2. In a skillet, heat olive oil over medium heat. Sauté the white and light-green parts of scallions with salt until softened.
  3. 3. Add corn and Tajin seasoning; sauté until corn softens. Mix in cream cheese until smooth.
  4. 4. Remove from heat, fold in sour cream and ¾ cup Cotija cheese, then bake for 10-12 minutes until bubbling.
