  • 8 large prawns (shell on, deveined)
  • ⅓ cup olive oil
  • 2 cloves garlic
  • 12 chillies
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start the BBQ grill by placing firelighters and charcoal until they are white hot.
  2. Prepare the marinade: In a pan, heat olive oil over medium heat. Grate in garlic, finely slice chillies, and add them to the pan. Cook for about 2 minutes. Stir in lemon juice and zest until fragrant.
  3. Marinate the prawns by coating them with half of the marinade mixture.
  4. Once the grill is ready, place prawns on it and cook for about 1-2 minutes per side until they turn pink and opaque.
  5. Drizzle remaining marinade over cooked prawns before serving.
