  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until smooth. Add eggs, oil, and vanilla; mix well. Gradually incorporate dry ingredients until combined.
  4. In another bowl, beat cream cheese until smooth; add extra sugar, egg yolk, and vanilla until combined.
  5. Fill muffin tins three-fourths full with batter; add cream cheese mixture on top and swirl gently with a toothpick.
