  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth.
  2. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Mix in egg yolks and vanilla.
  4. In another bowl, whisk together flour, black cocoa powder, baking powder, and salt. Gradually combine with the wet mixture.
  5. Scoop dough, flatten it in your palm, place cheesecake filling in the center, fold dough around it into a ball, and roll in black cocoa powder.
  6. Bake for 12-15 minutes until set but soft in the middle.
