  • 1 cup light brown sugar
  • ½ cup white sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ¼ cups flour + 2 TBSP (divided)
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats
  • 1 cup white chocolate chips
  • 1 cup quartered blackberries

Instructions

  1. Cream together the softened butter, light brown sugar, and white sugar until smooth. Beat in the eggs one at a time and add vanilla extract.
  2. In another bowl, mix flour, baking soda, and salt. Gradually combine this with the creamed mixture before folding in oats and white chocolate chips.
  3. Coat blackberries with the remaining flour to prevent discoloration, then gently fold them into the dough.
  4. Drop spoonfuls of dough onto a greased cookie sheet and bake at 325°F (160°C) for about 12-13 minutes or until edges are golden.
  5. Allow cookies to cool before transferring them to a wire rack.
