  • 5 egg whites
  • 1 1/4 cup granulated sugar
  • A few drops purple food coloring
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar or sweetener (maple syrup or honey)
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking tray with parchment paper.
  2. In a mixing bowl, beat egg whites until soft peaks form. Gradually add sugar until stiff peaks form. Fold in cornstarch, lemon juice, and food coloring.
  3. Spoon or pipe meringue onto the tray in rounds, creating indentations for filling.
  4. Bake for about 60 minutes until crisp outside and soft inside. Let cool in the oven with the door ajar.
  5. For the jam, combine blackberries, sugar, lemon juice, cornstarch, and water in a saucepan over medium heat until thickened; cool before use.
  6. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  7. Assemble by filling meringues with blackberry jam and topping with whipped cream.
