  • ¼ cup bourbon
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (sliced)
  • Olive oil
  • Soy sauce
  • Dijon mustard
  • Garlic (minced)
  • Kosher salt
  • Black pepper
  • Red pepper flakes
  • Apple cider vinegar

Instructions

  1. In a bowl, mix peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, pepper, and red pepper flakes to form the marinade.
  2. Marinate salmon fillets in half of the marinade for 30 minutes to 1 hour.
  3. Preheat oven to 375°F (190°C).
  4. Heat an oven-safe skillet over medium-high heat and sear the salmon skin-side up for 2-3 minutes.
  5. Flip salmon and add peach slices; cook for another 2-3 minutes.
  6. Pour remaining marinade over salmon and peaches, then transfer to oven.
  7. Bake for 12-15 minutes until cooked through (internal temperature of 145°F).
