  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek
  • 4 cloves minced garlic
  • 4 cups chicken or vegetable stock
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo pasta
  • 8 oz sharp cheddar cheese (shredded)
  • 1 cup heavy whipping cream
  • 57 slices turkey

Instructions

  1. Preheat oven to 400°F. Arrange turkey slices on a baking sheet and set aside.
  2. In a large pot over medium heat, melt olive oil and butter. Sauté leeks, broccoli stems, and potato for about 3 minutes. Add garlic, salt, pepper, and mustard powder; stir for another minute.
  3. Pour in stock and water (1-2 cups based on desired thickness) and bring to a simmer for about 10 minutes.
  4. While simmering, bake the turkey slices for 10-12 minutes until crispy.
  5. Blend the soup until smooth, then return to the pot and add orzo.
  6. After about 5 minutes, stir in broccoli florets and heavy cream; cook until orzo is tender.
  7. Mix in shredded cheddar until melted and serve topped with crispy turkey.
