  • 9 tbsp (134g) salted butter
  • 1/2 cup (125g) brown sugar
  • 1/4 cup (40g) granulated sugar
  • 1 egg, at room temperature
  • 1 tbsp (15g) heavy cream, at room temperature
  • 1 1/2 tsp (8g) vanilla extract
  • 1 1/4 cup + 2 tbsp (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 3/4 cup (120g) semi-sweet chocolate chips
  • 3 cups (300g) kataifi (shredded phyllo dough)
  • 1 cup (300g) pistachio cream/butter
  • 2 tbsp (28g) salted butter
  • 2 cups (475ml) heavy cream
  • 1 cup (170g) semi-sweet chocolate chips
  • Chopped pistachios, for garnishing

Instructions

  1. Preheat oven to 350ยฐF and grease an 8ร—8-inch baking pan lined with parchment paper.
  2. In a saucepan, melt salted butter over medium heat until browned; let cool slightly.
  3. Whisk together flour, baking soda, baking powder, and salt in a bowl.
  4. Combine cooled brown butter with sugars until mixed; add egg, cream, and vanilla extract.
  5. Fold dry ingredients into the wet mixture; then mix in chocolate chips.
  6. Bake for 22-27 minutes until golden; cool before adding pistachio filling.
  7. Toast kataifi in butter; combine with pistachio cream.
  8. Spread pistachio filling over cooled cookie layer; top with chocolate ganache.
  9. Refrigerate for at least one hour before slicing into 16 bars.
