  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat your oven to 350°F. Grease two 8×8 pans and line with parchment paper.
  2. In a medium bowl, mix melted butter with granulated and brown sugars until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vegetable oil and vanilla extract until smooth.
  5. In another bowl, combine flour, cocoa powder, and salt. Gradually add this to the wet mixture until fully incorporated.
  6. Divide batter between prepared pans and spread evenly.
  7. Bake for 30–40 minutes; check for doneness with a toothpick.
  8. Cool brownies for about 10 minutes before transferring to a cooling rack.
  9. Soften your favorite ice cream for about 5–10 minutes.
  10. Layer softened ice cream over one brownie half in the pan; top with the second half.
  11. Freeze assembled sandwiches for at least six hours or overnight before cutting into squares.
