  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Italian seasoning
  • garlic powder
  • salt
  • pepper

Instructions

  1. Cook the pasta in salted boiling water until al dente, drain, and set aside.
  2. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  3. In a skillet over medium heat, cook the chicken for 5–7 minutes per side until golden and cooked through. Let rest before slicing.
  4. Combine tomatoes, garlic, basil, balsamic vinegar, olive oil, and salt in a bowl to make the bruschetta topping.
  5. Toss cooked pasta in the skillet with any remaining chicken drippings. Slice the chicken and place on top of the pasta; add bruschetta topping.
  6. Serve warm with grated Parmesan cheese and extra basil if desired.
