  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In a bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt; mix gently.
  5. Toss the cooked pasta in the skillet with any chicken drippings. Layer sliced chicken on top and spoon the bruschetta topping over everything.
  6. Serve warm, garnished with Parmesan cheese and extra basil if desired.
