  • 3/4 cup salted butter
  • 3/4 cup heavy cream
  • 11 ounces butterscotch chips
  • 7 ounces vegan marshmallow creme
  • 1 tsp alcohol-free vanilla extract
  • 1 1/4 cups sugar (for white chocolate layer)
  • 6 Tbsp butter (for white chocolate layer)
  • 6 Tbsp heavy cream (for white chocolate layer)
  • 1 cup white chocolate chips
  • 1/2 cup vegan marshmallow creme (for white chocolate layer)
  • 1/2 tsp vanilla extract (for white chocolate layer)

Instructions

  1. For the butterscotch layer: In a saucepan, combine sugar, butter, and heavy cream over medium heat until melted. Boil for 5 minutes while stirring continuously. Remove from heat and stir in butterscotch chips until melted. Add vegan marshmallow creme and vanilla; mix well.
  2. Spread the mixture into a parchment-lined 8×8 inch pan and chill in the freezer while preparing the next layer.
  3. For the white chocolate layer: Combine sugar, butter, and heavy cream in another saucepan over medium heat until melted. Boil for 5 minutes while stirring constantly. Remove from heat, stir in white chocolate chips until melted, then add vegan marshmallow creme and vanilla; mix until combined.
  4. Spread the white chocolate mixture over the chilled butterscotch layer. Chill in the refrigerator for at least 2-3 hours before slicing into squares.
