- 10 cloves garlic
- 700 ml chicken stock
- 5 spring onions
- 8 boneless skinless chicken thighs
- 3 tablespoons kecap manis
- Ground white pepper to taste
- 30 ml neutral oil
- 1 tablespoon sesame oil
- 2 tablespoons toasted sesame seeds
- 70 ml water
- 1 cucumber
- 500 g cooked rice
- Sambal to serve as desired
- Prepare the broth by crushing ginger and garlic, adding them to chicken stock in a saucepan, and simmering gently.
- Marinate the chicken thighs in kecap manis, seasoning with salt and ground white pepper.
- In a frying pan, heat neutral oil and sauté spring onion greens until wilted; mix with sesame oil and toasted sesame seeds.
- In the same pan, cook the marinated chicken until golden and caramelized; add water to the leftover marinade until thickened.
- Slice cucumber, season with salt, and reheat cooked rice.
- Assemble by placing rice in bowls, ladling hot broth over it, topping with chicken and cucumber, then drizzling sambal if desired.
