  • 10 cloves fresh ginger
  • 10 cloves garlic
  • 700 ml chicken stock
  • 5 spring onions
  • 8 boneless skinless chicken thighs
  • 3 tablespoons kecap manis
  • Ground white pepper to taste
  • 30 ml neutral oil
  • 1 tablespoon sesame oil
  • 2 tablespoons toasted sesame seeds
  • 70 ml water
  • 1 cucumber
  • 500 g cooked rice
  • Sambal to serve as desired

Instructions

  1. Prepare the broth by crushing ginger and garlic, adding them to chicken stock in a saucepan, and simmering gently.
  2. Marinate the chicken thighs in kecap manis, seasoning with salt and ground white pepper.
  3. In a frying pan, heat neutral oil and sauté spring onion greens until wilted; mix with sesame oil and toasted sesame seeds.
  4. In the same pan, cook the marinated chicken until golden and caramelized; add water to the leftover marinade until thickened.
  5. Slice cucumber, season with salt, and reheat cooked rice.
  6. Assemble by placing rice in bowls, ladling hot broth over it, topping with chicken and cucumber, then drizzling sambal if desired.
