  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded sharp cheddar cheese
  • 12 diced jalapeños
  • 2 tbsp ranch seasoning
  • 1/4 cup cream cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • Salt & black pepper to taste
  • 1 cup flour
  • 2 eggs, beaten
  • 1.5 cups breadcrumbs
  • Neutral oil for frying (canola, vegetable, or peanut)
  • For the Creamy Dip: 1/2 cup mayo
  • 1/4 cup sour cream
  • 1 tbsp ranch dressing or seasoning
  • 1/2 tsp garlic powder
  • 1 tsp lemon juice or white vinegar
  • 1 tbsp chopped parsley
  • Red pepper flakes to taste
  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, cheddar cheese, jalapeños, ranch seasoning, cream cheese, garlic powder, salt, and pepper.
  2. Form the mixture into bite-sized balls and chill in the refrigerator for 15–20 minutes.
  3. Set up three shallow bowls for flour, beaten eggs, and breadcrumbs.
  4. Coat each ball in flour, then dip in eggs before rolling in breadcrumbs. For extra crunchiness, double-coat them.
  5. Heat oil to 350°F (175°C) and fry poppers in batches until golden brown (about 3–4 minutes per side).
  6. Drain on paper towels and prepare the creamy dip by mixing mayo, sour cream, ranch seasoning, garlic powder, lemon juice or vinegar, parsley, salt & pepper.
