  • 1 cup fresh cherries, pitted and chopped

  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1 package ladyfingers
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a mixing bowl, beat mascarpone cheese and heavy cream until fluffy. Add amaretto, cherry juice, and vanilla; mix well.
  2. Combine sugar and cherry preserves in a small bowl; add to the mascarpone mixture along with chopped cherries.
  3. Quickly dip ladyfingers into a mix of amaretto and cherry juice.
  4. Layer dipped ladyfingers in a baking dish, spread half the mascarpone mixture on top, then repeat layers.
  5. Refrigerate for at least 4 hours or overnight before serving. Dust with cocoa powder and chocolate shavings before enjoying.
