  • 1 tablespoon granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 3/4 cup unsalted butter (melted)
  • 1 3/4 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your oven to 325°F (170°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine pitted cherries, granulated sugar, cornstarch, and lemon juice; set aside.
  3. In a large bowl, whisk together flour, granulated sugar, cornstarch, and salt. Stir in melted butter until crumbly.
  4. Press half of the shortbread mixture into the prepared pan and bake for about 15–20 minutes.
  5. Top with the cherry mixture and sprinkle remaining shortbread on top.
  6. Bake for another 25 minutes until golden yellow. Allow to cool completely before slicing.
