  • 5 cups sweet dark cherries (about 2.5 lbs)
  • 2 1/2 cups white sugar
  • 3 tablespoons lemon juice
  • 1 vanilla bean (or 3 teaspoons vanilla extract)
  • 1 packet low-sugar pectin (49 g)

Instructions

  1. Thoroughly wash the cherries under cool water before removing the stems and pits.
  2. In a large pot, combine prepared cherries, lemon juice, vanilla bean seeds (or extract), and white sugar. Heat over medium until boiling, stirring regularly.
  3. Once boiling, stir in the low-sugar pectin and continue boiling for an additional 5-10 minutes until reaching your desired thickness.
  4. If canning, sterilize jars in hot water beforehand. Fill each jar with hot jam, leaving about 1/4 inch headspace. Clean the rims before sealing with lids.
  5. Process jars in a boiling water bath for about 10 minutes to ensure proper sealing.
