  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste
  • Optional: sliced tomato, red onion, crispy turkey bacon

Instructions

  1. In a mixing bowl, mash the avocado with lemon juice, salt, and pepper.
  2. Spread mayonnaise on one side of each slice of bread.
  3. On the non-mayo side of one slice, layer the avocado mixture, followed by shredded chicken and cheese.
  4. Top with the other slice of bread (mayo side facing out).
  5. Melt butter in a skillet over medium heat and grill the sandwich for 3–4 minutes per side until golden brown and cheese is melted.
  6. Slice in half and serve hot.
