  • 2 1/2 cups All-Purpose Flour
  • 1 1/2 cups Cake Flour
  • 1 cup cold, unsalted butter (cubed)
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 cup packed brown sugar
  • 8 oz. cream cheese (softened)
  • 2 Tbsp. ground cinnamon

Instructions

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon to create the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, baking soda, baking powder, salt, and corn starch.
  4. In a stand mixer, cream the cubed butter with granulated sugar until smooth. Add eggs and vanilla extract; blend well.
  5. Gradually add dry ingredients to the wet mixture until fully combined.
  6. On a floured surface, shape the dough into a rectangle and spread the cinnamon filling evenly on top.
  7. Roll the dough tightly into a log and cut it into about 10–12 cookies.
  8. Bake for 9–11 minutes until edges are golden brown.
  9. Allow cookies to cool before frosting with cream cheese icing.
