  • 1 pound Roma tomatoes (seeded and diced)
  • 15 ounce can black-eyed peas (rinsed and drained)
  • 15 ounce can black beans (rinsed and drained)
  • 1 cup frozen sweet corn (thawed)
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup olive oil
  • 2 tablespoons granulated sugar
  • 1/3 cup white vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • Chopped parsley for topping

Instructions

  1. In a large mixing bowl, combine diced Roma tomatoes, rinsed black-eyed peas, rinsed black beans, thawed corn, diced red onion, green bell pepper, and red bell pepper.
  2. In a separate bowl, whisk together olive oil, white vinegar, sugar, chili powder, and salt until well blended.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Cover and chill in the refrigerator for 3-4 hours before serving for optimal flavor.
