  • 1 medium onion, diced
  • 1 lb mushrooms, sliced
  • 4 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 (15 oz.) cans white beans, drained and rinsed
  • 2 cups dairy-free milk
  • Baby potatoes, cut into cubes
  • Dried thyme
  • Dried rosemary

Instructions

  1. In a large pot over medium heat, melt vegan butter. Add onion; sauté until softened.
  2. Stir in mushrooms, thyme, rosemary, salt, and pepper; cook until mushrooms are browned.
  3. Add garlic; cook for one more minute. Sprinkle cornstarch and stir well.
  4. Pour in tamari and mustard; mix thoroughly then add vegetable broth and potatoes. Bring to a boil then simmer uncovered for 15–20 minutes.
  5. Stir in beans and dairy-free milk; simmer for an additional 10–15 minutes until thickened.
