  • lbs boneless, skinless chicken breasts, cut into bite-sized chunks
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 12 oz fettuccine pasta
  • 2 tbsp butter
  • 1½ cups heavy cream
  • 4 oz cream cheese, softened
  • 1 cup grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Boil fettuccine in salted water until al dente. Drain and set aside, reserving ½ cup pasta water.
  2. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Sear the chicken for 5–6 minutes, flipping to brown all sides.
  5. Add butter and minced garlic; toss to coat before removing from heat and setting aside.
  6. In a clean skillet, melt butter over medium heat.
  7. Stir in cream cheese until smooth.
  8. Slowly pour in heavy cream while whisking continuously.
  9. Add Parmesan, mozzarella, garlic powder, salt, and pepper; stir until cheese is melted and sauce is thick.
  10. Toss cooked fettuccine in the Alfredo sauce until well coated. Plate generously with warm Cajun chicken bites on top.
  11. Sprinkle with chopped parsley and extra Parmesan for an elegant finishing touch.
