  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 8 oz penne pasta
  • 1 tbsp olive oil
  • Fresh parsley, chopped for garnish

Instructions

  1. Bring a pot of salted water to boil and cook the penne according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until browned (6–7 minutes). Transfer the chicken to a plate.
  3. In the same skillet, reduce heat to medium and melt butter. Add minced garlic, cooking until fragrant (about 1 minute). Stir in Cajun seasoning, smoked paprika, salt, and pepper.
  4. Pour in heavy cream and chicken broth, stirring to combine. Allow the sauce to simmer for 4–5 minutes until thickened.
  5. Add grated Parmesan cheese to the sauce; stir until melted and smooth. Return the cooked chicken and drained penne to the skillet, tossing everything together.
  6. Serve hot, garnished with fresh parsley.
