  • 2 tbsp Cajun seasoning
  • 1 lb linguine pasta
  • 4 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Romano cheese
  • 1/4 tsp red pepper flakes, optional
  • 2 tbsp chopped sun-dried tomatoes, oil-packed, drained
  • 1/4 cup chopped fresh basil

Instructions

  1. Cook the linguine according to package instructions until al dente; reserve ½ cup of pasta water before draining.
  2. Season chicken with Cajun seasoning. In a skillet, heat olive oil over medium heat, add chicken, and sauté until cooked through; remove from skillet.
  3. In the same skillet, add sliced bell peppers and onion; sauté until soft (5-7 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  4. Pour in chicken broth and simmer briefly; in another pan, melt butter over medium heat and add garlic.
  5. Stir in heavy cream, Parmesan cheese, salt, and black pepper until smooth.
  6. Combine cooked linguine with creamy sauce in a large bowl or pot; adjust consistency with reserved pasta water as needed.
  7. Add sautéed chicken, veggies, sun-dried tomatoes, and parsley; mix thoroughly.
  8. Serve topped with additional cheese and basil.
