  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon unsweetened almond milk
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 23 cups fresh mixed greens
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • pinch of salt
  • 1/2 cup pepitas
  • 1 Tablespoon olive oil

Instructions

  1. Prepare the dressing by blending orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar using an immersion blender until smooth.
  2. Preheat your grill to medium-high heat.
  3. Brush pineapple slices lightly with olive oil and grill for about 2 minutes per side until charred. Grill corn for approximately 5 minutes per side.
  4. In salad bowls, layer mixed greens and top with grilled pineapple, corn kernels, pepitas, blueberries, and avocado.
