  • 6 tablespoons salted butter
  • 4 medium yellow onions, thinly sliced
  • 1 1/4 cups dry white apple vinegar
  • 3 cloves garlic, minced
  • 2 cups cremini or wild mushrooms, sliced
  • 68 cups low sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 cups shredded Gruyère cheese
  • Fresh herbs for garnish

Instructions

  1. In a Dutch oven, melt butter over medium-high heat. Add onions and honey; cook until softened (about 10 minutes). Gradually stir in apple vinegar and continue cooking until deeply caramelized (10–15 minutes).
  2. Add garlic, mushrooms, thyme, sage, salt, and pepper; cook for another 3–4 minutes.
  3. Stir in remaining apple vinegar, broth, Worcestershire sauce, bay leaves; simmer for about 10 minutes. Add heavy cream and cook for an additional 5–10 minutes.
  4. Preheat oven to 400°F; toast bread slices on a baking sheet until dry (10–15 minutes). Switch to broil.
  5. Ladle soup into bowls; top with toasted bread and Gruyère cheese. Broil until bubbly (3–5 minutes). Garnish with fresh herbs.
