  • 2 small sweet potatoes
  • 1 small onion, diced
  • 200g mushrooms, sliced
  • 2 garlic cloves, crushed
  • 60g spinach
  • 1 heaped tbsp tahini
  • 1 tsp nutritional yeast
  • Juice of ½ small lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and place them on a baking sheet. Roast for about 40 minutes or until fork-tender.
  2. While the sweet potatoes roast, heat a skillet over medium heat with olive oil. Sauté the diced onion until translucent (about 5 minutes), then add crushed garlic and sliced mushrooms—cook until tender (about 5–7 minutes). Stir in spinach until wilted.
  3. Remove from heat; mix in tahini, nutritional yeast, lemon juice, salt, pepper, and optional cayenne.
  4. Once sweet potatoes are done roasting, cut them open lengthwise and gently mash some flesh while keeping skins intact. Spoon in the creamy filling generously.
  5. Serve warm and enjoy!
