  • 3 tablespoons butter
  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • salt
  • black pepper
  • ground sage
  • ground nutmeg
  • brown sugar

Instructions

  1. Cook the rigatoni in boiling salted water until al dente. Drain and reserve some pasta water.
  2. In a skillet over medium heat, melt the butter. Add diced onion and optional red pepper flakes; cook until translucent.
  3. Stir in minced garlic and sauté briefly before adding pumpkin puree. Combine well.
  4. Gradually whisk in heavy cream along with salt, black pepper, sage, nutmeg, and brown sugar; let simmer until slightly thickened.
