  • 14 oz young potatoes
  • 1 tablespoon butter
  • 79 oz heavy cream
  • 1/3 cup grated hard cheese (e.g., Parmesan)
  • 3235 oz vegetable or meat-based stock
  • 1 large bunch fresh dill
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Peel and dice the onion, potatoes, and carrots; grate the carrot.
  2. In a pot, melt the butter and sauté the onion until translucent.
  3. Add diced potatoes and grated carrot; cook for another few minutes.
  4. Pour in the stock; bring to a boil, then simmer until potatoes are tender.
