  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)

Instructions

  1. Coat the chuck roast with oil and season generously with steak seasoning and thyme.
  2. Heat a skillet over high heat and sear the roast on all sides for about 2-3 minutes each.
  3. Pour in the beef broth, scraping any browned bits from the skillet, then transfer this liquid into the slow cooker.
  4. If using vegetables, prepare them by washing, peeling, and cutting into large pieces. Toss with oil and seasonings before adding them to the slow cooker on top of the roast.
  5. Cook on low for 7-8 hours or high for about 3.5-4 hours until tender.
  6. About an hour before serving, dissolve cornstarch in water and stir it into the cooking liquid to thicken.
