  • 23 pounds boneless chuck roast
  • 1 tablespoon avocado oil or neutral oil (plus more for taco frying)
  • coarse ground salt and fresh ground pepper
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo (from a can)
  • 1 small red onion (thinly sliced)
  • 8 whole cloves garlic (smashed)
  • 32 ounces beef stock
  • 1 tablespoon tomato paste
  • 14.5 ounce can Fire roasted diced tomatoes
  • 1/4 cup Apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • corn or flour tortillas
  • lime wedges
  • fresh cilantro leaves
  • diced white onion
  • shredded Oaxacan cheese (or Italian cheese)

Instructions

  1. Sear the seasoned chuck roast in avocado oil over high heat for about 5-6 minutes on each side until browned.
  2. Transfer the seared beef to a crockpot and add all remaining ingredients. Stir well and cover.
  3. Cook on low heat for 8 hours until the beef is fork-tender.
  4. Shred the beef using two forks and blend the sauce ingredients until smooth.
  5. Mix shredded beef with sauce and serve in warmed tortillas topped with cilantro, diced onion, and lime.
