  • 1 cup cake flour

  • 1/2 teaspoon salt
  • Pinch nutmeg
  • 3/4 cup vegetable oil (avocado or canola)
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 325°F (165°C) and grease a loaf pan.
  2. Soak the dates in hot water for about 10 minutes to soften them.
  3. In a large bowl, sift together the cake flour, baking powder, cinnamon, salt, and nutmeg.
  4. In another bowl, whisk together the oil, brown sugar, honey, eggs, and vanilla until smooth.
  5. Combine the wet and dry mixtures until just mixed.
  6. Drain and chop the soaked dates before folding them along with chopped walnuts into the batter.
  7. Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
