  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup diced cheddar cheese
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons finely chopped white onion
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha
  • Salt and pepper to taste

Instructions

  1. Cook the elbow pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine drained pasta with half the dill pickle juice; let it sit for 5 minutes then drain again.
  3. In another bowl, mix mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, pepper, and fresh dill to create the dressing.
  4. Combine seasoned pasta with diced cheese, sliced pickles, chopped onion, and extra dill in a large serving bowl. Add dressing and toss until fully coated.
  5. Cover the salad and refrigerate for 4-6 hours before serving.
