  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15 oz) can pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup cold butter
  • 3/4 cup all-purpose flour
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×4 bread pans.
  2. In a large mixing bowl, combine flour, salt, baking soda, and spices.
  3. Mix in granulated sugar and brown sugar until well combined.
  4. Create a well in the center; add canola oil and mix gently.
  5. Incorporate eggs two at a time until fully integrated.
  6. Add pumpkin puree, water, and vanilla extract; mix until smooth.
  7. Divide batter between prepared pans.
