  • 3 large whole eggs
  • 3 large egg yolks
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup freshly squeezed lemon juice, about 4 lemons
  • Salt
  • 1 cup heavy whipping cream, cold
  • 1/2 cup homemade lemon curd, room temperature
  • 1/3 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Zest and juice the lemons, reserving 1/2 cup of lemon juice.
  2. Make lemon curd: Cream butter, add sugar, salt, and zest; mix in eggs one at a time; combine with lemon juice; cook over low heat until thickened.
  3. Cool the lemon curd completely.
  4. Prepare the lemon filling by whisking eggs, yolks, sugar, zest, juice, and salt over simmering water until thickened; cool.
  5. Beat egg whites until soft peaks form; gradually add sugar until stiff peaks form; fold into the cooled lemon filling.
  6. Whip heavy cream until stiff peaks form; gently fold into the mixture.
  7. Combine with cooled lemon curd until just incorporated.
  8. Chill in serving cups for at least one hour before serving.
