  • 8 ounces linguine or preferred pasta
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 56 cloves minced garlic
  • 12 ounces halved cherry or grape tomatoes
  • 1/4 teaspoon Italian seasoning
  • 2 cups packed fresh baby spinach
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.
  2. In a skillet over medium-high heat, melt olive oil and butter. Add garlic, tomatoes, and Italian seasoning; sauté until tomatoes soften (about 4-5 minutes).
  3. Stir in spinach and cook until just wilted (1-2 minutes).
  4. Reserve 1/4 cup of pasta water, then drain the pasta. Combine with the sauce in the skillet along with reserved water and parmesan cheese; toss to mix well.
  5. Season with salt and pepper as desired, then serve warm.
