  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot (finely chopped)
  • 4 garlic cloves (minced)
  • ¼ cup dry white apple vinegar
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 can (14 oz/400 g) cherry tomatoes
  • 3 tbsp chopped basil leaves
  • 2 mozzarella balls (chopped)
  • 3 tbsp grated Parmesan
  • Crushed red pepper flakes (for sprinkling)

Instructions

  1. Preheat your oven to 200 °C (400 °F).
  2. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil and butter in an ovenproof skillet over medium-high heat; cook chicken until browned (about 5 minutes per side).
  4. Remove chicken and set aside. In the same skillet, sauté shallots and garlic until fragrant.
  5. Deglaze with dry white apple vinegar; simmer briefly before adding tomato paste, broth, and cherry tomatoes.
  6. Nestle chicken back into the sauce; top with mozzarella and chopped basil.
  7. Simmer for 5 minutes or bake for 10 minutes until golden.
