  • 12 tablespoons very cold unsalted butter, diced
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar (for glaze)
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract (for glaze)
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup (for glaze)
  • Pinch of kosher salt (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse to mix.
  3. Add cold butter and pulse until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the heavy cream and eggs. Gradually add this to the dry ingredients until a dough forms.
  5. Turn dough onto a lightly floured surface and shape into a disc. Chill in the freezer for 30 minutes.
  6. Roll out dough and cut into desired shapes. Place on the prepared baking sheet and brush with egg wash.
  7. Bake for 20-22 minutes until golden brown.
  8. For the glaze, whisk together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup until smooth. Dip warm scones in glaze.
