  • pounds stewing beef (lean, cut into 1-inch pieces)
  • 2 large onions (roughly chopped)
  • 5 cloves garlic (minced)
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds (ground)
  • ½ cup tomato sauce
  • 4 cups beef broth (no salt added)
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over high heat. Sear the beef until browned on all sides and then remove.
  2. In the same skillet, reduce heat to medium-high and sauté onions and garlic until soft.
  3. Add sweet paprika, caraway seeds, and other spices; cook briefly until fragrant.
  4. Stir in tomato sauce and beef broth, scraping up any browned bits from the pan.
  5. Return beef to the pot. Bring to a boil, then cover and simmer on low for about 2 hours until tender.
  6. Adjust seasoning as needed and garnish with fresh parsley before serving.
