  • 2 lb beef chuck stew meat
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (divided)
  • 1 medium onion (diced)
  • 2 medium carrots (sliced)
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 1 lb celery root (peeled & cubed)
  • 6 cups beef bone broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 medium bay leaves

Instructions

  1. Season the beef with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium heat; sear the beef until browned. Remove from pot.
  3. In the same pot, sauté onions and carrots until soft.
  4. Add garlic and Italian seasoning; sauté until fragrant.
  5. Return beef to pot, add broth, diced tomatoes, and bay leaves. Scrape browned bits from the bottom.
  6. Bring to a boil, then reduce heat and simmer for 45–60 minutes until beef is tender.
  7. Add cubed celery root; simmer for an additional 15 minutes until tender.
  8. Remove bay leaves before serving.
