  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup celery, chopped
  • 1 jalapeno, finely chopped
  • 14 1/2 ounces diced tomatoes
  • 3 ounces tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon oregano
  • 2 teaspoons paprika
  • 1 cup bone broth
  • salt and pepper, to taste
  • shredded cheese for topping

Instructions

  1. In a skillet over medium-high heat, cook ground beef until browned; drain excess fat.
  2. Add chopped onions, celery, and bell pepper; sauté until tender.
  3. Stir in jalapeno and minced garlic; cook for one minute.
  4. Mix in chili powder, cumin, oregano, and paprika; cook for another 30 seconds.
  5. Add diced tomatoes, tomato paste, salt, pepper, and bone broth; stir well.
  6. Simmer uncovered for about 20 minutes. Serve hot topped with shredded cheese.
