  • 1/3 cup pine nuts
  • 2 handfuls baby arugula
  • 1/3 cup freshly grated parmesan cheese
  • 1/4 cup fresh basil leaves
  • 1 to 2 cloves garlic, grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons white balsamic vinegar
  • 1/2 teaspoon dijon mustard
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
  2. Toast pine nuts in a dry skillet over medium heat until golden brown.
  3. In a mixing bowl, whisk together grated garlic, salt, black pepper, lemon zest, lemon juice, white balsamic vinegar, dijon mustard, and olive oil to create the dressing.
  4. In a large bowl, combine cooked pasta with toasted pine nuts, arugula, parmesan cheese, and basil leaves. Pour dressing over and toss gently to coat.
  5. Adjust seasoning and chill for 30 minutes if desired before serving.
