  • 4 salmon fillets (6 oz each)
  • 1/2 cup unsalted butter
  • 2 lemons (juice of 1, slices from 1)
  • 4 cloves garlic (minced)
  • 4 medium potatoes
  • 1 lb broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper if desired.
  2. Wash and cut potatoes into cubes, then toss with olive oil, salt, pepper, and paprika in a large bowl. Spread on one side of the baking sheet.
  3. Bake potatoes for 25 minutes until golden brown.
  4. While potatoes are baking, melt butter in a saucepan over medium heat, add minced garlic, and cook until fragrant.
  5. Stir in lemon juice and season to taste.
  6. After 15 minutes of potato roasting, push them aside on the baking sheet and add seasoned salmon fillets. Spoon lemon butter over salmon and top with lemon slices.
  7. Add broccoli florets to the baking sheet; drizzle with olive oil and season.
  8. Roast everything together for another 15-20 minutes until the salmon is cooked through and broccoli is tender.
  9. Let rest briefly before serving garnished with fresh parsley if desired.
