  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • ½ cup fresh squeezed lemon juice
  • 1 cup dry orzo pasta

Instructions

  1. Gather all ingredients. Chop vegetables and mince garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté carrots, onion, celery, and garlic for 5–7 minutes until softened.
  3. Add black pepper, dried herbs, chicken breasts, broth, and bay leaves; bring to a boil.
  4. Reduce heat to simmer and cook for about 30 minutes until chicken is thoroughly cooked.
  5. Remove chicken and stir in orzo pasta; cook according to package instructions.
  6. Shred the chicken into bite-sized pieces and return to pot along with lemon juice; simmer for an additional minute before serving.
